The Easiest Vegetarian Chilaquiles Recipe + Giveaway

I love eating Mexican food and I’ve recently been into eating chilaquiles more. Last year for my birthday my hubby took me to a really good Mexican restaurant in the city and I ordered chicken chilaquiles. They were so good but so spicy, like woah. I love spicy food but I don’t like my food too spicy to the point that I can’t eat it, you know? I was left wanting more chilaquiles. I have ordered a few chilaquiles from different Mexican restaurant and they all tasted pretty good and not so spicy, but I wanted to make my own!

Guess what!? I did just that and today I am going to share with you the easiest vegetarian chilaquiles recipe ever! I’m serious, so delicious and super easy thanks to my trusted #HERDEZ® salsa verde which has the perfect hint of heat. You can also purchase the salsa casera which is equally delicious. I love cooking easy recipes because as a mom of three, easy is what I strive for. For this vegetarian chilaquiles recipe you will only need a few ingredients like lettuce, tomato, crema (sour cream), cotija cheese, tortillas and of course HERDEZ® salsa verde and that’s it!

This month we are celebrating el Día del Niño which means celebrating the child, this is a holiday celebrated in Mexico and other Latin American countries in which they celebrate the children, how cool is that!? I love the idea of this holiday because it gives us moms a day of just celebrating our children and maybe taking them to their favorite restaurant or taking them to watch a movie. I will be celebrating el Día del Niño with my kids in the kitchen. I love cooking with my children, even though they make all kinds of messes, let’s be real. I do love how they ask me questions about the ingredients that I am using and how they use their hands to feel the different kinds of textures.  Cooking together with my children just bonds us even more and it’s pretty fun, I have to admit.

When you are cooking with your children make sure you are making an easy recipe because it keeps them entertained and busy, easy peasy for me always works, just like my vegetarian chilaquiles. Ingredients and instructions

So, let’s start by cutting our tortillas into small pieces, doesn’t matter the shape and then frying it in a pan to perfection. Transfer the fried tortillas to a plate and then in a different pan add the HERDEZ® salsa verde and cook for a couple of minutes. Once the salsa is bubbling hot, add the fried tortillas into the sauce, mix well making sure every piece of tortilla is soaked into the salse verde and then you are done. Now it’s time to plate it and add the rest of the ingredients.

What’s so fun about this super easy vegetarian chilaquiles recipe is that you can add your favorite vegetables. I went really simple and added, lettuce, white onions and tomatoes, I topped it off with Mexican crema which is sour cream and cotija cheese, super delicious and easy.

Me encanta comer comida mexicana y recientemente he estado en comer chilaquiles. El año pasado para mi cumpleaños mi marido me llevó a un muy buen restaurant Mexicano en la ciudad y  ordene chilaquiles de pollo. Estaban tan bueno, pero tan picante, como woah. Me encanta la comida picante pero no me gusta mi comida demasiado picante hasta el punto que no puedo comer, ¿sabes? Me quedé con ganas de más chilaquiles. He ordenado unos chilaquiles de diferentes restaurant Mexicano y  todo sabía bastante bueno y no tan picante, pero yo quería hacer mis propios!

¿¡Adivina qué!? Fue lo que hice y hoy voy a compartir con ustedes la receta más fácil de chilaquiles vegetariano! Estoy hablando en serio, tan delicioso y super fácil gracias a esta rica salsa verde HERDEZ® , que tiene el toque perfecto de picante. También puedes comprar la salsa casera, que es igualmente delicioso. Me encanta cocinar recetas fáciles, porque como madre de tres niños, lo fácil es que me esfuerzo en hacer. Para esta receta vegetariana  de chilaquiles solo necesitará utilizar algunos ingredientes como la lechuga, tomate, crema ,queso Cotija, tortillas y por supuesto la salsa verde HERDEZ®  y eso es todo!

Me encanta la idea de esta fiesta, ya que nosotras  las mamás nos podemos concentrar en celebrar a nuestros hijos yllevarlos a su restaurante favorito o llevándolos a ver una película. Yo estaré celebrando el Día del Niño con mis hijos en la cocina. Me encanta cocinar con mis hijos, a pesar de que hacen todo tipo de líos, seamos realistas. A mi me gusta la forma en que me hacen preguntas acerca de los ingredientes que estoy usando y cómo utilizan sus manos para sentir los diferentes tipos de texturas. El cocinar junto con mis hijos sólo nos une aún más y es bastante divertido, tengo que admitir.

Ingredientes y instrucciones

Por lo tanto, vamos a empezar por cortar nuestras tortillas en trozos pequeños, no importa la forma y luego freírlo en una sartén a la perfección. Transfiera  las tortillas fritas en un plato y luego en una sartén diferente agregar la salsa verde HERDEZ® y cocer durante un par de minutos. Una vez que la salsa esté burbujeando caliente, añadir las tortillas fritas en la salsa, mezclar bien asegurarse de que cada pedazo de tortilla se sumerge en la salsa verde y después que haya terminado. Ahora es el momento de colocarlo en un plato y añadir el resto de los ingredientes.

¿Qué es tan divertido de esta super fácil de receta es que puedes añadir sus vegetales favoritos. Fui muy simple y añadí, lechuga, cebolla blanca y tomates, despues lo termine con agregando con crema Mexicana, y queso Cotija, super delicioso y fácil.
