Lent is around the corner and I have the perfect dish for you to enjoy without missing the meat! This delicious vegetarian loaded stuffed avocado will hit the right spot. It’s hearty, has fresh ingredients and guess what? It’s easy to prepare too. I love that MorningStar Farms® products helps make Lent successful.

I remember when I was younger that my sisters and I would forget about Lent, after eating a nice chicken or steak lunch (my parents were working, they couldn’t save us) we would scream “oh no, we can’t eat meat today!” This wouldn’t happen often but when it did we felt bad because it’s a family tradition to observe Lent. One thing I look forward to and that my family always makes is “habichuelas con dulce” a typical and popular Dominican bean dessert that is usually eaten around Lent season and Easter. I can taste it now, haha!

I went with my family to Walmart and grabbed the MorningStar Farms® Maple Flavored Veggie Sausage Patties and MorningStar Farms® Veggie Bacon Strips. I wanted to try them out and let me just be honest here, I loved it! You can easily find these and many other options in the freezer isle in Walmart 🙂

This vegetarian loaded stuffed avocado is a delicious dish that you can enjoy for breakfast, brunch or even dinner! It’s full of Latin flavors and the best part about it, is that it will not cost you a leg! I also love that with MorningStar Farms® products I can live a healthier lifestyle and so can you! Okay recipe time because I know you want to dive into this vegetarian goodness, I don’t blame you girl!

Vegetarian loaded stuffed avocado

Ingredients 

  1. 1 avocado or more
  2. 3 eggs
  3. Salt and pepper to taste
  4. A few cilantro leaves, chopped red onions, green and red bell peppers (to your liking)
  5. MorningStar Farms® Maple Flavored Veggie Sausage Patties
  6. MorningStar Farms® Veggie Bacon Strips

Instructions

In a non-stick skillet place the MorningStar Farms® Maple Flavored Veggie Sausage Patties and the MorningStar Farms® Veggie Bacon Strips and cook on medium high for a couple of minutes, making sure to cook on both sides ( you can follow instructions on the box). 

Then set aside and chop the veggie sausage patties and the veggie bacon strips into small pieces. In the same skillet add about 1/2 tablespoon of vegetable oil and cook the red onion, red and green bell peppers on medium heat for about 3 to 4 minutes ( until soft, fragrant and translucent). Add your eggs, season with salt and pepper and scramble. Then add the chopped veggie sausage patties and veggie bacon strips. Mix well and set aside.

Now, all you want to do is cut the avocado in half, remove the seed and scoop some of the avocado “meat” out in order to make room for the filling. Stuff your avocado with the delicious vegetarian egg scramble and enjoy!

Cuaresma está a la vuelta de la esquina y tengo el plato perfecto para disfrutar sin extrañar la carne! Este delicioso plato vegetariano llegará al lugar correcto. Es abundante, tiene ingredientes frescos y adivina qué? Es fácil de preparar también. Me encanta que los productos de MorningStar Farms® ayudan a que la Cuaresma sea exitosa.

Recuerdo que cuando era más joven, mis hermanas y yo nos olvidábamos de Cuaresma, después de comer un buen pollo o un almuerzo de bistec (mis padres estaban trabajando, no podían  salvarnos) gritábamos  “oh no, no podemos comer Carne hoy! ” Esto no sucedia a menudo, pero cuando si, nos sentimos mal porque es una tradición familiar observar la Cuaresma. Una cosa que espero y que mi familia siempre hace es “habichuelas con dulce” un típico y popular postre de frijol Dominicano que se come generalmente alrededor de la temporada de Cuaresma y Semana Santa. Puedo probarlo ahora, jaja!

Vegetariano aguacate relleno

Ingredientes

1 aguacate
3 huevos
Sal y pimienta al gusto
Algunas hojas de cilantro, cebollas rojas picadas y pimientos verdes y rojos (a su gusto)
MorningStar Farms® Bocadillos de salchichas con sabor a arce
MorningStar Farms® Tiras de tocino vegetariana

Instrucciones

En una sartén antiadherente, coloque las el tocino y las salchichas sabor a arce y cocine a fuego medio por un par de minutos, asegurándose de cocinar en ambos lados (puede seguir las instrucciones en la caja ).

A continuación, ponga a un lado y cortar las salchichas vegetariana y las tiras de tocino vegetariano en trozos pequeños. En el mismo sartén añadir aproximadamente 1/2 cucharada de aceite vegetal y cocinar la cebolla roja, pimientos rojos y verdes a fuego medio durante unos 3 a 4 minutos (hasta suave, fragante y translúcido). Añade tus huevos, sazona con sal y pimienta y revuelve los huevos. A continuación, agregue las salchichas picadas y tiras de tocino vegetariano. Mezcle bien y deje reposar.

Ahora, todo lo que quieres hacer es cortar el aguacate a la mitad, quitar la semilla y recoger un poco de la “carne” de aguacate con el fin de hacer espacio para el relleno. Rellene su aguacate con la deliciosa mezcla de huevos vegetarianos y disfrutar!
