Happy Monday!

How was your weekend? Mine was pretty good as per usual, My hubby and I had a chilled Saturday watching movies and playing with the kids. On Sunday I spent the day with my sisters watching reality T.V and eating pizza, my kind of day haha!

Today I want to share with you these amazing potato croquettes with bacon and cheese because they are so easy to make and so tasty. I made these the other day when I had left over mashed potatoes which I did not want to throw out in the garbage. We are trying to save money in this household and that means not wasting food. So I then realized that I can make some delicious potato croquettes, so that’s exactly what I did!

 love how simple this recipe is and it takes no time in preparing and making it. What a perfect way to use leftover mashed potatoes. If you do not have left over mashed potatoes and you are dying (not literally) to make these, then simply make mash potatoes, season it to your taste and liking and then just place it in the refrigerator so it can cool down. Then you are ready to make these potato croquettes with bacon and cheese.

I think anything with bacon and cheese taste so much better!

¿Cómo estuvo tu fin de semana? La mía estaba  bueno como de costumbre, mi esposo y yo tuvimos un sábado relajado viendo películas y jugando con los niños. El domingo me pasé el día con mis hermanas viendo la television y comiendo pizza, mi tipo de día jaja!
Hoy quiero compartir con ustedes estas croquetas de papas increíbles con tocino y queso porque son muy fáciles de hacer y tan sabroso. Hice esto el otro día cuando me sobraba puré de papas,  no queria tirar a la basura. Estamos tratando de ahorrar dinero en esta casa y eso significa no desperdiciar comida. Así que me di cuenta entonces  podia hacer unas deliciosas croquetas de papas con tocino y queso, así que eso es exactamente lo que hice!
Me encanta lo simple que es esta receta y toma muy poco tiempo en la preparación. ¡Qué manera perfecta para utilizar las sobras de puré de papas. Si no tienes sobras de puré de papas y  te estás muriendo (no literalmente) para hacer esto, entonces simplemente has puré de papas, lo sazonas a tu gusto y agrado y luego simplemente colóquelo en el refrigerador para que se enfríe. Entonces usted está listo para hacer estas croquetas de papa con tocino y queso.
Creo que cualquier cosa con tocino y queso sabe mucho major!

I simply cooked the bacon, you can either cook it on your stove top or bake it in the oven, which ever you want, it will still crisp up. Then we are ready to place all of the ingredients in a bowl and mix very well, I also added 2 eggs, paprika powder, and cracker crumbs ( I didn’t have breadcrumbs). After mixing all of the ingredients together, using a spoon, mold the mixture into oval shapes and then you are ready to fry it.

How easy right? My family loved these delicious and crunchy and cheesy potato croquettes with bacon and cheese. You can definitely make them for your next party or get together because it will not disappoint.

Yo simplemente cociné el tocino, usted puede cocinar en su estufa o cocer en el horno, como usted desee, estara  crujiente. Entonces estamos listos para colocar todos los ingredientes en un bol y mezclar muy bien, yo también añadi 2 huevos, polvo de pimentón y rallado de galleta (Yo no tenía pan rallado). Después de mezclar todos los ingredientes juntos, usando una cuchara, moldear la mezcla en formas ovaladas y entonces usted está listo para freír.

¿Qué tan fácil ¿no? Mi familia le encantaron estos deliciosas y crujientes y quesosas croquetas de papa con tocino y queso. Definitivamente, usted puede hacer  para su próxima fiesta o reunion porque no le defraudará.
