I am so excited that November is here, even though I think this year is going by super fast. It kinds of scares me, haha! Anyways I love that Thanksgiving is almost here and that means Christmas and New Years is around the corner! I love the Holidays 🙂
For me the month of November is all about preparing for thanksgiving and decorating for Christmas. My mom took out the Christmas tree and started decorating it today. Can you believe this women!? like wait and give Thanksgiving some respect. After Thanksgiving I am in full Christmas decoration mode.
I love soup and I wanted to make pumpkin soup because, well it’s fall and we are all kindof obligated to eat or drink pumpkin related recipes right?

Estoy tan emocionada que Noviembre este aquí, aunque creo que este año esta pasando muy rápido. Y como que me asusta, jaja! De todas formas me encanta que Acción de Gracias este casi aquí y eso significa la Navidad y Año Nuevo esta a la vuelta de la esquina! Me encantan los días de fiestas 🙂 Para mí el mes de Noviembre tiene que ver con la preparación de la acción de gracias y la decoración de Navidad. Mi madre sacó el árbol de Navidad y comenzó a decorarlo hoy. ¿Puedes creer a esta mujer !? como que espere y darle a acción de gracias un poco de respeto.
Me encanta la sopa y yo quería hacer sopa de calabaza porque, bueno estamos en otoño y estamos tipo obligados a comer o beber recetas de calabaza relacionados verdad?
I love how creamy this pumpkin soup is, is so so delicious, I am not even kidding. Even my kids ate some of it, notice the word some, haha! kids are too funny and picky which is not funny at all. But I somehow managed to get them to eat some of this soup and they liked it.
My 6 year old said it was good (surprise and happy face here) and my twins also ate and seem to like it. Even though they did not eat everything, I am happy they got vegetables in their system. My hubby loved the soup and took seconds and me? well I loved it aswell specially with the crunchy croutons and creamy nutty cotija cheese. It makes a difference trust me.
This creamy pumpkin soup is super easy and delicious and I hope you can enjoy it just like I did.
Me encanta cómo esta sopa de calabaza es tan cremosa, es tan deliciosa, yo ni siquiera estoy bromeando. Incluso mis niños comieron un poco, observe la palabra poco jaja! los niños son demasiado graciosos y exigente que no es divertido en absoluto. Pero de alguna manera me las arreglé para que coman algo de esta sopa y les gustó.
Mi hija de 6 años dijo que estaba buena (sorpresa y cara feliz aquí) y mis mellizos también comieron y parece que les gusto. A pesar de que no se comíeron todo, estoy feliz verduras tuvieron en su sistema. Mi marido le encantó la sopa y tomó segundos y yo?, me encantó especialmente con los trocitos de pan crujiente y queso cotija nuez cremosa. Hace una diferencia confía en mí.
Esta sopa de calabaza cremosa es muy fácil y deliciosa, y espero que usted pueda disfrutar de ella como lo hice yo.
- FOR THE SOUP / PARA LA SOPA
- 1.6 lbs of Jamaican pumpkin / 1.6 lbs de Calabaza jamaiquina
- 4 1/2 cups of vegetable broth / 4 1/2 tazas de calso de vegetal
- salt and pepper to taste / sal y pimiento al gusto
- paprika to taste ( I used about 1 teaspoon) / pimento en polvo al gusto( yo use 1 cucharita)
- Adobo all purpose seasoning ( about a teaspoon) / sazon adobo(una cucharadita)
- 2 tablespoons of heavy cream / 2 cucharadas de crema de leche
- Mexican cotija cheese/ queso cotija
- FOR THE CROUTONS / PARA EL PAN TOSTADO
- 1 roll of bread (do not use single slices, can use Italian bread) ? 1 rolo de pan (puedes usar pan italiano)
- ground Parsley( I used from a bottle, if fresh just chopped really fine) / perejil picadito
- parmesan cheese / queso parmesano
- olive oil / aceite olive
- all purpose seasoning / sazon adobo
- For the croutons:
- cut bread into small pieces and sprinkle some olive oil on top of it and mix well coating every piece of bread, then add the rest of the seasonings, mix well and bake in the oven in a 375 degree heat for about 9 minutes. Set aside. / corte el pan en pedasitos y agregue un poco de aceite olive, mezcle bien, y agregue el resto de los ingredients, mezcle y cocine en el horno por 9 minutos en 375 grados.
- For the soup:
- Add the pumpkin and vegetable stock in a deep pan and cook for 30 minutes on medium heat. / ponga la Calabaza y el caldo de vegetal en una olla y cocine por 30 minutos en fuego medio alto.
- after the pumpkin is cooked add it in a blender along with some of the vegetable broth.Add the seasonings as well to your taste and liking. You will blend and if it’s too thick then keep adding vegetable broth to it until the consistency is creamy and not lumpy. / ya cuando este la Calabaza, agregue en una licuadora y agregue tambien un poco del caldo de vegetal. usted va a tener que ir agregando el caldo poco a poco hasta que la consistencia este cremosa y no pesada. Tambien agregue los sazone al gusto.
- Once the soup is creamy place it in a pan and add the heavy cream, mix well and add soup in your favorite plate, add croutons and cotija cheese! enjoy 🙂 / Ya cuando la sopa este cremosa, agregue en otro sarten y agregue la crema de leche, mezcle y sirva en su plato favorite, agregue el pan y el queso cotija. Que disfrute!

It’s hilarious that your mentioned how your kids ate “some” of the soup. This would probably be my kids. lol! Nevertheless, this recipe looks very delicious. Perfect for cold days. 😉

This soup sounds amazing and so festive! The homemade croutons sound fabulous too. I’m sure my kids would LOVE those!
I can’t believe how quickly this year has flown either. It’s crazy. Last year, I decorated for Christmas a little early; the weekend before Thanksgiving and I actually really liked it! I was glad to have all the decorating done before the craziness of the Christmas season hit!
