leftover food recipes

Happy Friday!

How was your thanksgiving day? Did you eat a lot and are still in a food coma? haha! Well I hope not because I have a delicious and easy leftover recipe for you. I am talking about this tasty mashed potato patty with chipotle BBQ chicken. So easy, so delicious and so satisfying.

What I love most about thanksgiving is the amount of food that we eat and then have leftover for the next day. Sometimes you eat the same food the next day and sometimes you just want something different but do not want to waste food. So this is  when your food creativity kicks in and you start to think about how can you transform regular Thanksgiving dishes into something spectacular and yummy!

I love this recipe because it is so easy and simple to make, no hassle and it’s done in literally 15 minutes! I  had some leftover cheesy mashed potatoes and baked chicken, so I thought why not make something quick and different. I love anything BBQ, so I grabbed my favorite BBQ sauce from the refrigerator and some chipotle peppers I had in my pantry, and call it a day with this recipe.

What’s great about this recipe is that you can add whatever you want to it. If you do not have chicken, please make it with your leftover turkey. Also if you have leftover pernil (roasted pork) it will taste equally delicious!

To make this delicious mashed potato patty with chipotle BBQ chicken you will need ofcourse leftover mashed potatoes, chicken ( or turkey), BBQ sauce, chipotle peppers, mango chunks, chopped small yellow onion and for garnish cilantro and green onions and some limes.

Instructions:

Start with forming a patty with the mashed potatoes, add a small amount of oil to a pan and just sear the patty so it can have a nice brown crust on both sides. Then after the patty is done, place it on a plate and then continue to shred your chicken (or turkey) and place it in the same pan with a little bit of oil. Add the onion, BBQ sauce and 1 chipotle pepper and some mango chunks ( I used fresh mango) or pineapple if you have. Mix and cook until the flavor are incorporated, about 5 to 7 minutes. Place the mashed potato patty in a plate and add the delicious chipotle BBQ chicken on top of it and that’s it. Taste the holidays in a whole new delicious level!

I hope you can enjoy this dish as much as I did.

Have a great day and I will see you next time.

¡Feliz viernes!

 Hugs, Ros Emely
