double baked sweet potato

Happy Thursday!

I am so happy we are in the month of December because Christmas is on this month, duh! I love everything from the Christmas lights, to the Christmas tree, the cold weather, the snow and just the all around happy feeling that I get in December.

It’s a magical month nonetheless and I am excited to share with you this easy to make double baked sweet potatoes recipe. Even though sweet potato casseroles is a Thanksgiving staple, it doesn’t matter because you can have them all year round!

I love how easy this dessert is to make  and how delicious it taste. You can make your sweet potatoes savory or sweet, for today I decided to make a sweet dessert. You can make these easy double baked sweet potatoes as a casserole or serve them as individual desserts, like I did.

easy baked sweet potatoes

I hope you can enjoy this delicious sweet potato dessert and give it a try. I think your kids are going to love it and so will your guests if you decide to make it for Christmas Eve. You know what? I think these might just make it to the Christmas eve food table 🙂

You will only need a few ingredients and nothing more, it’s delicious, simple and easy, just what a busy mom needs. Now let’s get started.

Ingredients:

  • 1 sweet potato ( ofcourse you can use more)
  • 1 tablespoon of butter
  • 1 cinnamon stick
  • 1 1/2 teaspoon of regular sugar
  • salt
  • olive oil
  • 1 teaspoon of brown sugar
  • marshmallows

Instructions:

  • First, you want to place the sweet potato in a baking sheet, rub it with olive oil and sprinkle salt on top. Bake the sweet potato for 1 hour in 375 degrees.
  • While the sweet potato is baking, in a small pot, add the butter and the cinnamon stick, cook on medium heat for a couple of minutes until the butter starts turning brown. Remove the cinnamon stick.
  • Once the sweet potato is done, place it in a plate and cut it open in half. With a spoon scrape and remove the “meat” inside and place it in a small bowl.
  • Mix in the regular sugar, butter, sprinkle salt, and mix well.
  • Now, place the sweet potato into the same baking pan, add the mixture into both halves and sprinkle brown sugar on top and add the marshmallows.
  • Bake in the oven for 5 minutes on 375 degrees heat until marshmallows softens and melts, then crank up the heat to 430 degrees for about 1 minutes, so the marshmallows can get that nice brown color.
That’s it, now all you have to do is enjoy this delicious baked sweet potato treat.
Have a great day and I will see you next time.

¡Feliz jueves!

Ahora vamos a empezar.

Ingredientes:

 Hugs, Ros Emely
