Green Mashed Potatoes

Happy Wednesday!

I know I know what you’re thinking, “Ros Emely, what the heck is that!?” but I promise you if you look passed the color you are going to jump with me on this green mashed potato wagon and roll with it. I actually love the green color and I think it’s fun, plus if you know what the green color is, you are going to love it!

Okay, so the green goodness is spinach, wonderful and delicious spinach that I sautéed and then blended it up. You know, hiding the spinach evidence from my wonderful non-picky eaters, haha! This recipe is brought to you from my mother in law’s kitchen, she sometimes makes this delicious green mashed potatoes for my kids and they surprisingly eat the whole thing up!

Regular mashed potatoes just got a green upgrade and I love the fact that my kids still enjoy a creamy and cheesy mashed potato but with healthy and much needed vegetable in their system. Honestly, you can’t taste the spinach, it hides in the creamy and cheesy mashed potatoes and what’s great about it, is that you can serve it with anything. I served mine with baked salmon, soo good!

My kids definitely enjoyed eating this fun, delicious and healthy(sort of, minus the cheese and butter) green mashed potatoes, so I am hoping it works for your little ones too. This is a kid friendly recipe that adults can also enjoy, let’s be honest I was more excited about eating this than my kids, haha!

Ingredients:

4 large Idaho potatoes

3 cups of spinach

2 to 4 tablespoon of butter

1/2 cup of regular milk

salt

1/2 tablespoon of garlic powder

cheddar cheese (your choice of how much you want to add)

Instructions:

  1. In a shallow pan, add the peeled potatoes (cut in half) and add water until it covers the potatoes.
  2. Boil for about an hour or until it’s tender when you put a fork in it. (add salt when it starts boiling)
  3. For the spinach, in a pan, add a little bit of oil (about 1/2 tablespoon) add the spinach (make sure you pre-wash first) and garlic powder. Sautéed for about 5 minutes and then add it to a blender and blend it up.
  4. Now, that the potatoes are nice and tender, drain the water and add the butter, milk, spinach, cheddar cheese and start mashing away!
* taste it and if it needs more salt, add a little bit more salt*
I hope you can make and enjoy this super easy and super green mashed potatoes.
important note: If your kids ask you why the mashed potatoes is green, tell them it’s food coloring, it’s a secret, or whatever other white lie you have to tell to get them to eat this green goodness. Once they taste it, they are going to love it!

Yo sé Yo sé lo que estás pensando, “Ros Emely, ¿qué diablos es eso !?” pero te prometo que si nos fijamos pasó el color, vas a saltar conmigo en este vagón de puré de patata verde y rodar con ella. De hecho, me encanta el color verde y creo que es divertido, además si usted sabe lo que el color verde es, le va a encantar!

De acuerdo, por lo que le da el color verde es la espinaca, espinaca maravillosa y deliciosa salteadas y después licuada en la licuadora. Ya sabes, ocultando la evidencia de espinacas de mis maravillosos hijos que no son quisquillosos jaja! Esta receta es traído a usted de mi suegra, que a veces hace este delicioso puré de patatas verdes  a  mis hijos y ellos sorprendentemente  se lo comen todo!

Puré de patatas regular acaba de recibir una actualización verde y me encanta el hecho de que a mis niños todavía disfrutan de un cremoso puré de patatas y queso pero con vegetales, necesarios en su sistema. Honestamente, no se puede probar la espinaca, se esconde en el  cremoso puré de papas y lo que es bueno de esto, es que se puede servir con cualquier cosa. Serví el pure con salmón al horno, pues Buenisimo!

Mis hijos disfrutaron comer definitivamente esta diversión, deliciosa y saludable (más o menos, menos el queso y la mantequilla) puré de patatas verdes, así que estoy segura de que trabajara para sus pequeños también. Esta es una receta fácil para niños que los adultos pueden disfrutar también, seamos honestos, yo estaba más emocionada por comer esto que mis hijos, jaja!

Ingredientes:

4 grandes papas de Idaho

3 tazas de espinacas

2 a 3 cucharada de mantequilla

1/2 taza de leche regular

sal

1/2 cucharada de ajo en polvo

queso cheddar ( la cantidad que desea añadir)

Instrucciones:

1. En un recipiente profundo, añadir las patatas peladas (cortadas por la mitad) y añadir agua hasta que cubra las patatas.
2. Hierva durante aproximadamente una hora o hasta que esté tierna cuando se pone un tenedor en él. (Añada sal cuando empiece a hervir)
3. Para las espinacas, en una sartén, añadir un poco de aceite (aproximadamente 1/2 cucharada) agregar la espinaca (asegúrese de prelavarlo primera) y ajo en polvo. Salteado durante unos 5 minutos y luego añadirlo a una licuadora.
4. Ahora, que las patatas estan suaves, escurrir el agua y añadir la mantequilla, la leche, espinacas, queso cheddar y comiencen a majar!

* Probarlo y si necesita más sal, añadir un poco más de sal *

 Espero que usted puede hacer y disfrutar de esta súper fácil y súper verde puré de patatas.

 
Nota importante: Si tus hijos te preguntan por qué el puré de patatas es de color verde, les dices que es colorante de alimentos, es un secreto, o lo que sea otra mentira blanca que tengas que decir para conseguir que coman esta delicia verde. Una vez que la prueban, les va a encantar!
