Easy cilantro lime rice recipe

cilantro lime riceThis delicious cilantro lime rice came about on Cinco de Mayo when I wanted to cook something that reminded me of Mexican food, of course! I didn’t want to go out to grocery shop, so I took a look at my fridge and found some cilantro leaves and limes. BINGO! Since I’ve been seeing this recipes a few times on food blogs and YouTube videos, I thought “Why not”? It’s super simple to make and delicious and flavorful to eat too.

You can make this cilantro lime rice on any occasion and it pairs off great with anything that you want to eat it with. You can eat it with chicken, any type of seafood and steaks, soo good! I love how it has that fresh cilantro taste in it and also that citrus from the lime juice that just brightens up the entire dish. Since I am a rice lover and I cook rice every day, having a variety of different rice recipes is a must for me. Let’s be serious, my family and I can’t live off eating only regular white rice, even though I wouldn’t mind, haha!

Okay, mamas! Let’s start with the recipe because I know that’s why you are here and if you let me talk more than I should, I won’t stop! I’m just saying 🙂 Anyways, so all you are going to need is regular long grain white rice, white onions, cilantro leaves, and limes. I like to cook the rice first and then add the cilantro and lime juice at the end, that way the cilantro leaves still has its aroma and freshness. If you add the cilantro leaves while the rice is still cooking, then the cilantro leaves will fade in color and flavor and you do not want that. I feel like I said cilantro 100 times, but it’s all good right!?

Este delicioso arroz con cilantro se produjo el Cinco de Mayo cuando quería cocinar algo que me recordaba a la comida Mexicana, por supuesto! Yo no queria salir a la tienda a comprar, así que tomé un vistazo a mi nevera y encontré algunas hojas de cilantro y limones. ¡BINGO! Desde que he estado viendo este receta un par de veces en los blogs de alimentos y videos de YouTube, pensé: “¿Por qué no”? Es super fácil de hacer y muy sabrosa de comer también.

Usted puede hacer este arroz con cilantro y limon en cualquier ocasión y lo puedes acompañar con cualquier cosa que desee comerlo. Se puede comer con pollo, cualquier tipo de mariscos y carnes, pues bueno! Me encanta la forma en que tiene ese sabor de cilantro fresco y también  los cítricos  del jugo de limón que solo ilumina el plato entero. Puesto que soy un amante del arroz y cocino arroz todos los días, tener una variedad de diferentes recetas de arroz es una necesidad para mí. Seamos serios, mi familia y yo no podemos vivir de comer sólo arroz blanco, a pesar de que no me importaría, jaja!

De acuerdo, mamas! vamos a empezar con la receta, porque sé que es por eso que están aquí y si me dejas hablar más de lo que debería, yo no paro! Sólo digo 🙂 De todas formas,  todo lo que vas a necesitar es arroz normal blanco de grano largo, hojas de cilantro, cebolla blanca y limon verde. Me gusta cocinar el arroz primero y luego añadir el cilantro y el jugo de limón al final, de esa manera el cilantro todavía tiene su aroma y frescura. Si agrega las hojas de cilantro, mientras que el arroz todavía se está cocinando, a continuación, las hojas de cilantro se desvanecen en el color y sabor y  no quieres eso. Siento que he dicho cilantro 100 veces, pero esta bien, verda?

Ingredients
  • 3½ cups of water / 3½ taza de agua
  • 2 cups of long grain white rice / 2 tazas de arroz largo
  • 1 cup or so of cilantro leaves (washed and patted dry) / 1 taza de hojas de cilantro (lavado y secado)
  • the juice of 2 to 3 limes / el jugo de 2 limones verdes
  • 1 small white onion (chopped) / 1 cebolla pequeña blanca (cortadita)
  • 2 tablespoon of oil / 2 cucharas de aceite
  • 1 tablespoon of salt / 1 cuchara de sal
Instructions
  1. In a rice pan add the oil and the onions and cook for about 3 minutes or until the onions are translucent / en un sarten de arroz, agregue el aceite y cebolla, cocine por 3 minutos.
  2. Add the water and and salt and let the water boil, once it's boiling add the rice and stir. let it cook on high heat until the rice have almost absorb the water. then lower the heat to low and cook for 30 minutes. / agregue el agua y la sal y deje que hierba, despues agregue el arroz y mezcle y cocine a fuego alto hasta que arroz halla absorbido la mayor parte del agua. Tape el sarten y deje cocinar el arroz en fuego bajo por 30 minutos.
  3. Now, you are ready to add the chopped cilantro leaves and the lime juice! Stir well incorporating all of the flavors together and enjoy! / Ahora, estas lista para agregar las hojas de cilantro y el jugo del limon. Mezcle muy bien y estas lista para comer!
