Happy Saturday!

Summer vacation starts next Wednesday for my sweet 6 year old princess who is anxiously counting down the days. I cannot believe my first born is going to second grade, like what!? hold up wait a minute. Why is she growing up so fast? and why every mom always say this?

My twins are 2 years old so I get to stay with them and enjoy them until they are 4 years old and are ready to go to school. When that happens folks, you can find me crying in a corner all by myself because my kids are grown and I can’t find a way to stop them. In the meantime, I want to share with you this super easy and  delicious strawberry and mango popsicles. #perfectsummertreat

My kids love them and so do I because I get to control the amount of ingredients I am adding and feeding to my kids. You know the number one ingredient that we want to control, SUGAR! You can definitely make this sugar free or you can add honey to substitute for granulated sugar like I did. These strawberry and mango popsicles are refreshing on a hot summer day and super creamy too.

Las vacaciones de verano comienzan el próximo miércoles para mi dulce niña de 6 años que esta esperando ansiosaemnte por eso. No puedo creer que mi primera hija va a segundo grado. Como que que! esperar un minuto. ¿Por qué está creciendo tan rápido? y porque cada mamá siempre dice esto?

Mis mellizos tienen 2 años de edad por lo que puedo quedarme con ellos y disfrutar de ellos hasta los 4 años de edad cuando esten listos para ir a la escuela. Entonces gente ,pueden encontrarme llorando en una esquina sola porque mis hijos ya son mayores y no puedo encontrar una manera de detenerlos. Mientras tanto, quiero compartir con ustedes esta super fácil y  deliciosa paleta de  fresa y mango.

A mis hijos les encanta y a mi también porque me permite controlar la cantidad de ingredientes que le estoy añadiendo y alimentando a mis hijos. Conoce el número uno de los ingredientes que se queremos controlar,la  AZÚCAR! Definitivamente, usted puede hacer  esto sin agregar azúcar o puedes agregar miel para sustituir el azúcar granulada como yo lo hice. Esta paleta de helado de mango y  fresas es refrescante en un día caluroso de verano y super cremoso también.

My kids are always asking me if I can buy them icecream and so I decided to save money and make my own at home. After all I had all of the ingrediensts that I needed to make these delicious strawberry and mango popsicles. My kids helped me make these popsicles which by the way, they had so much fun doing and eating to say the least.

I will be sharing more popsicles recipes because I know I am going to make a lot of it this summer. Using different fruits and even adding a few vegetables too. Yup! I can’t wait.

Mis hijos siempre me preguntan si yo les puedo comprar helado y así que decidi ahorrar dinero y hacer mi propia en casa. Después de todo tenía todos los ingrediensts que necesitaba para hacer estas ricas paletas de helado de fresas y mango. Mis hijos me ayudaron a hacer estas paletas de helado que se divertieron mucho preparandolo y comiendo se lo por decir lo menos.

Me gustaría poder compartir más paletas recetas porque sé que voy a hacer mucho este verano. El uso de diferentes frutas e incluso añadir algunas verduras también. ¡Sip! No puedo esperar.

Ingredients:

** This recipes makes 4 popsicles**

1 1/2 medium size mango (peeled and sliced) / 1 1/2 mango mediano (pelado y cortado)

10 to 15 strawberries ( washed and cut in half) / 10 a 15 fresas (lavadas y cortadas por mitad)

1/2 tablespoon of honey / 1/2 cuchara de miel

1/2 cup evaporated milk / 1/2 taza de leche evaporada

ice cubes / cubitos de hielo

Instructions:

  1. In a blender add the strawberries and 1 tablespoon of water (so it can be easy to blend) If the strawberries are on the sour side, add 1 teaspoon of sugar.
  2. After you have blended the strawberries, add into popsicle molds about less than half way through.
  3. Wash blender and add the mango, ice cubes, evaporated milk and honey. Blend and pour on top of the strawberry mixture in the popsicle mold.
  4. Refrigerate overnight (like I did) or for a couple of hours until it’s firm.

1. En una licuadora agregar las fresas y 1 cucharada de agua (por lo que puede ser fácil de mezclar) Si las fresas están en el lado amargo, añadir 1 cucharadita de azúcar.
2. Después de haber mezclado las fresas, añadir en moldes de paleta alrededor de menos de la mitad.

3. lavar la licuadora y añadir el mango, cubitos de hielo, leche evaporada y la miel. Mezclar y verter en la parte superior de la mezcla de fresas en el molde de paletas.
4.Refrigerar durante la noche a la mañana (como yo) o durante un par de horas hasta que este firme y se pueda comer.
