Easy Tamarind chicken

I love easy and quick recipes that fulfills my family’s appetite. I also love trying out new ingredients and products because sometimes making the same food over and over again can get boring. I’m so happy that Goya send me a few of their wonderful products and their healthy recipe cookbook, so I can try out some of their recipes. I decided on this tamarind chicken, I never tried adding tamarind to any of my dishes, so this was a must try for me.

I am a huge Goya fan, I have most of their products and use it for my everyday cooking. Also, if you go to any Hispanic household, I guarantee that you will find a Goya product somewhere in their pantry. The women of my family cook with Goya and so it was passed down to me, which is great! The Happy healthy celebrations cookbook, has a variety of quick and easy recipes that your family can enjoy. All recipes include “my plate” icon, which illustrates the five food groups. Which are fruit, vegetable, grain, protein and dairy and it helps you have a healthy diet. Like Goya states

” It’s a simple reminder that before you eat, think about what and how much goes on your plate, in your cup or in your bowl”

The original tamarind chicken recipe calls for grilling the chicken but since I don’t have a grill, I made stewed tamarind chicken instead, and it taste super delicious as well. You can either grill, bake or make stewed chicken for this recipe. You can serve it over white rice (like I did), mashed potatoes, or vegetables.

So, let’s start making this easy and flavorful tamarind chicken..

Ingredients

6 chicken drumsticks

1 small red onion (finely chopped)

2 celery sticks (finely chopped)

1/2 tablespoon of GOYA Adobo Light All-Purpose Seasoning with pepper

1 can (9.6 oz.) GOYA Tamarind Nectar

2 tablespoons GOYA Extra Virgin Olive Oil

5 garlic cloves (finely chopped) or GOYA Minced Garlic

2 chipotle chiles finely chopped from GOYA Chipotle Chiles in Adobo Sauce

Instructions:

1.In a bowl, mix in the chicken, celery, onion, Adobo light all-purpose seasoning, garlic, and 1 tablespoon of GOYA extra virgin olive oil. Mix well and set aside.

2. In a skillet, add 1 tablespoon of GOYA’s extra virgin olive oil, 1/2 tablespoon of regular granulated sugar ( it gives the chicken color) and once the sugar is caramelizing add the chicken. Sear for 5 minutes on each side and then add the remainder from the bowl (celery, onions, garlic) and add 1/2 cup of water. Cook chicken for 45 minutes (or until fully cooked) on medium high heat. You may add more water if chicken is drying up.

3. In the meantime, in a different pan or skillet, add the GOYA tamarind nectar and the GOYA chipotle chiles. Cook for about 5 to 8 minutes until you see that the tamarind sauce is thickening up. Now place the sauce in a blender and blend until sauce is smooth.

4. Once the chicken is fully cooked, pour the tamarind sauce over and mix well. Enjoy!

quick note: Since I have small children and they do not like spicy food, I simply set aside their chicken before pouring the tamarind sauce.

I hope you enjoyed this simple and delicious tamarind chicken. My family loved it and so did I!  The tamarind sauce did not over power the other flavors of the chicken. It was the perfect balance of sweet and savory. Oh, as you can see I paired my chicken with white rice and avocadoes. So good!

Me encanta recetas fáciles y rápidas que cumple el apetito de mi familia. También me encanta probar nuevos ingredientes y productos, porque a veces haciendo la misma comida una y otra vez puede ser aburrido. Estoy tan feliz de que Goya me envío algunos de sus maravillosos productos y su libro de cocina de recetas saludables, por lo que puede probar algunas de sus recetas. Me decidí por este pollo de tamarindo, nunca intentado añadir tamarindo a mis comidas, así que era un deber probarlo para mí.

Soy una gran fanatica de lo productos Goya, tengo la mayor parte de sus productos y lo uso en mi cocina diaria. Además, si usted va a cualquier hogar hispano, le garantizo que encontrará un producto de Goya en algún lugar de su despensa. Las mujeres de mi familia cocinan con Goya y por lo que se pasó a mí, que es grande! El libro de recetas celebraciones feliz y saludables , tiene una variedad de recetas rápidas y fáciles que su familia pueda disfrutar. Todas las recetas incluyen un icono de “mi plato“, que ilustra los cinco grupos de alimentos. Cuáles son las frutas, verduras, cereales, proteínas y productos lácteos y que le ayuda a tener una dieta saludable. Como dice Goya

Así que la receta original de pollo tamarindo llama para asar el pollo pero como yo no tengo una parrilla, hice pollo guisado de tamarindo, que es súper delicioso también. Puede cocinar el pollo a la parrilla, al horno o hacer pollo guisado como esta receta. Se puede servir con arroz blanco (como yo), patatas majadas, o vegetales.

Por lo tanto, vamos a empezar a hacer este fácil y sabroso pollo de tamarindo ..

 

Ingredientes:

6 muslos de pollo

1 cebolla roja pequeña (finamente picada)

2 ramas de apio (picado)

1/2 cucharada de Adobo GOYA light para todo uso con Pimienta

1 lata (9.6 oz.)  GOYA nectar de Tamarindo

2 cucharadas de aceite de oliva virgen extra GOYA

5 dientes de ajo (picado) o Ajo Picado GOYA

2 chiles chipotles finamente picadas de GOYA Chipotle Chiles en salsa adobo

Instrucciones:

 

1.En un bol, mezclar el pollo, el apio, la cebolla,  Adobo  light condimentos, ajo y 1 cucharada de aceite de oliva virgen extra de Goya. Mezcle bien y deje reposar.

2. En una sartén, añadir 1 cucharada de aceite de oliva virgen extra de Goya, 1/2 cucharada de azúcar granulada regular (para dar color) y una vez que el azúcar se caramelize añadir el pollo. Dorar durante 5 minutos por cada lado y luego añadir el resto de lo que estaba en el bol (apio, cebolla, ajo) y añadir 1/2 taza de agua. Cocine el pollo durante 45 minutos (o hasta que este completamente cocido) sobre fuego medio-alto. Puede añadir más agua si el pollo se está secando.

3. Mientras tanto, en una cacerola o sartén diferente, añadir el néctar de tamarindo Goya y los chipotles Goya. Cocine por unos 5 a 8 minutos hasta que vea que la salsa de tamarindo se esta poniendo espeso. Ahora coloca la salsa en una licuadora y mezcle hasta que la salsa esté suave.

4. Una vez que el pollo esté completamente cocido, se vierte la salsa de tamarindo y mezclar bien. Disfruta!

 

Nota rápida: Como tengo hijos pequeños y no les gusta la comida picante, simplemente deje a un lado su pollo antes de verter la salsa de tamarindo.

Espero que hayan disfrutado este sencillo y delicioso pollo tamarindo. Mi familia le encantó y a mi también! La salsa de tamarindo no lo hizo sobre poderoso de los otros sabores del pollo. Fue el equilibrio perfecto de dulce y salado. Oh, como se puede ver eh emparejado mi pollo con arroz blanco y aguacates. ¡Tan bueno!
