Easy kid- friendly broccoli and carrot fritters

An easy way to get your kids to eat their vegetables. These broccoli and carrot fritters are so delicious, so easy and will be a family favorite.Hey Hey! It was snowing yesterday here in New York and schools were closed. I was happy, my kiddos were happy, everybody was happy. I love looking at the snow fall, it’s mesmerizing. Don’t ask about the after math of the storm because it ain’t pretty, everything is mushy and it’s not my favorite. Snow days in my house calls for empanadas, warm chocolate chip cookies and family time. I love it.

Do you know what else I love? These broccoli and carrot fritters, they are so perfect to “hide the veggies” with and oh so delicious. All three of my kids ate everything on their plate and so this makes it totally kid-friendly. I love that these fritters are super easy to make and are perfect as an appetizer served with your favorite dipping sauce. I served these kid-friendly broccoli and carrot fritters as part of the main dish with white rice and Dominican stewed beans

Hola, hey! Estaba nevando ayer aquí en Nueva York y las escuelas estaban cerradas. Estaba feliz, mis niños estaban felices, todos estábamos felices. Me encanta mirar la nieve caer, es fascinante. No me preguntes por después de la tormenta porque no es bonito, todo es lodo y no es mi favorito. Los días de nieve en mi casa requieren empanadas, galletas con trocitos de chocolate y tiempo familiar. Lo amo.

¿Sabes qué más amo? Estas tortitas de brócoli y zanahorias que son tan perfectos para “esconder los vegetales” y son tan delicioso. Mis tres hijos se comieron todo en su plato, por lo que es totalmente amigable para los niños. Me encanta que estas tortitas sean súper fáciles de hacer y perfectos como un aperitivo servido con su salsa favorita. Yo los serví como parte del plato principal con arroz blanco y habichuelas guisados Dominicanas.

easy kid friendly broccoli and carrot frittersOne of the ingredients that I added that really played part in disguising these vegetables, was the cheddar cheese! It really make the fritters moist and cheesy which makes every bite the perfect bite. Incorporating vegetables into my family’s diet is very important to me, I love creating new recipes that I can easily add vegetables in. I am totally making these broccoli and carrot fritters again.

If you’re having one of those lazy days, where you do not want to cook or be in the kitchen for more than 30 minutes, than this is your recipe. There are only a few ingredients like carrots, broccoli, eggs and cheddar cheese. The rest are just the seasoning, I went simple with a dash of salt and pepper. All you do is mix everything together and fry them up to perfection. They’re so cheesy, so delicious and the perfect “hide the vegetables” recipe that your kids will actually enjoy!

¡Uno de los ingredientes que agregué que realmente jugó un papel en el disfraz de estos vegetales, fue el queso cheddar! Realmente hacen que las tortillas sean suavecitas y quesoso, lo que hace que cada bocado sea el bocado perfecto. Incorporar verduras en la dieta de mi familia es muy importante para mí, me encanta crear nuevas recetas en las que puedo agregar vegetales fácilmente. Voy a hacer estas torrejas de brócoli y zanahoria nuevamente.

Si tienes uno de esos días de cansancio, donde no quieres cocinar o estar en la cocina por más de 30 minutos, esta es tu receta. Solo hay algunos ingredientes como zanahorias, brócoli, huevos y queso cheddar. El resto es solo el condimento, fui simple con una pizca de sal y pimienta. Todo lo que haces es mezclar todo junto y freírlos hasta la perfección. Son tan quesoso,  deliciosa y perfecta para “esconder los vegetales” que tus hijos realmente disfrutarán!

Ingredients
  • --1 large broccoli head (washed, boiled with water for 15 minutes and mashed) / 1 cabeza de broccoli lavada, cocinar en agua por 15 minutos y majar)
  • --4 medium carrots (washed and grated) / 4 zanahorias medianas (lavadas y rallar)
  • --7 whole eggs / 7 huevos enteros
  • --salt and pepper to taste / sal y pimienta al gusto
  • - cheddar cheese to taste / queso cheddar al gusto
Instructions
  1. In a mixing bowl, mix all of the ingredients together. / mezclar los ingredientes en un percipiente.
  2. -- In a pan at medium heat, add avocado oil enough to pan fry the fritters. / en un smarten a fuego medio, agrgar aceite.
  3. -- With a spoon, scoop out the mixture and place it in the hot oil (be careful!) one by one. Cook for less than a minute or until golden brown on the bottom. Flip to the other side and keep frying.
  4. Con una cuchara, colocar la mezcla uno por uno (con cuidado) y freer por menos de 1 minuto. O hasta que estén dorados de un lado, después voltear del otro lado y seguir friendo.
  5. -- Place on a paper towel to absorb the oil. / Colocar en papel de toalla para obsorber el aceite
  6. -- serve and enjoy! / servir y disfrutar
