A quick and easy chicken salad stuffed avocado. The perfect light, low carb lunch or dinner. Packed with so much flavor, you got to try this!I love love avocados! From guacamole to avocado toast (my fave!) to vegetarian breakfast stuffed avocado. Everything and anything with avocado is delicious in my mind. Today, I’m sharing my new favorite way of eating avocados. This chicken salad stuffed avocado is a perfect lunch or dinner meal, it’s low on carb and it’s packed with flavor. This is a quick and easy meal which is perfect for busy moms like you!

I decided to cook my own chicken by boiling a few pieces of chicken thighs (juicier than chicken breasts) with dried Dominican oregano. I cooked it for about an hour and 15 minutes or until the chicken was fully cooked. Then, I drained the chicken thighs, shredded it with a fork or you can use your hands, whatever floats your boat 😉 After, I seasoned it with salt, ground pepper, garlic powder and also added vegan mayonnaise. To finish off my chicken salad, I also added finely chopped celery, red onions, red and orange bell peppers, dried cranberries, raisins and sunflower seeds. It’s so delicious!

Me encantan los aguacates! Desde guacamole hasta tostadas de aguacate (¡mi favorito!) Hasta aguacate relleno de desayuno vegetariano. Todo y cualquier cosa con aguacate es delicioso en mi mente. Hoy, estoy compartiendo mi nueva forma favorita de comer aguacates. Este aguacate relleno de ensalada de pollo es una comida perfecta para el almuerzo o cena, es baja en carbohidratos y está lleno de sabor. ¡Esta es una comida rápida y fácil que es perfecta para madres ocupadas como tu!

Decidí cocinar mi pollo hirviendo unos trozos de muslos de pollo (más jugosos que las pechugas de pollo) con orégano dominicano seco. Lo cociné durante aproximadamente una hora y 15 minutos o hasta que el pollo esté completamente cocinado. Luego, drené los muslos de pollo, los trituré con un tenedor o puedes usar tus manos. Después, lo sazoné con sal, pimienta molida, ajo en polvo y también añadí mayonesa vegana. Para terminar mi ensalada de pollo, también agregué apio finamente picado, cebollas rojas, pimientos rojos y anaranjados, arándanos secos, pasas y semillas de girasol. ¡Es tan delicioso!

Quick tip:

For an even faster chicken salad, you can buy a rotisserie chicken at your favorite restaurant or supermarket. Shredded it and follow the rest of the recipe 🙂

For the avocado, all I did was cut them in half, pitted them and peeled the skin off. You can leave it on if you want. Add lime juice on top of each avocado and then a pinch of pink Himalayan salt.

Para una ensalada de pollo aún más rápida, puedes comprar un pollo asado en tu restaurante o supermercado favorito. Triturarlo y seguir el resto de la receta 🙂

Para el aguacate, todo lo que hice fue cortarlos a la mitad, quitar la semilla y pelar la cascara. Puedes dejarlo con la cascara si quieres. Agregue jugo de limón encima de cada aguacate y luego una pizca de sal rosa del Himalaya.
 

Mi familia realmente disfrutó de esta receta rápida y fácil, y realmente espero que puedas disfrutarla también.

Quick and easy chicken salad stuffed avocado full of flavor

Ingredients
  • 6 chicken thighs (boil with water, dried oregano, for 1 hour and 15 minutes (can be less time, it all depends), drain and shred)
  • --2 avocados
  • --1 teaspoon of salt
  • - 1 teaspoon of ground pepper
  • - 1 teaspoon garlic powder
  • - finely chopped red onion
  • --1 celery minced and washed
  • -- red and orange bell peppers, washed and minced
  • - 3 tablespoons of vegan or regular mayonnaise
  • - juice of 1 lime
  • - Seeds, dried cranberries and raisins to taste
  • *Spanish*
  • --6 muslos de pollo (hervir con agua, oregano seco, por 1 hora y 15 minutos, drenar y desmenuzar)
  • --2 aguacates
  • --1 cucharadita de sal
  • --1 cucharadita de pimienta
  • --1 cucharadita de ajo en polvo
  • --cebolla roja picadita
  • --1 rama de apio picadito y lavado
  • --ajies o pimientos rojos y naranjas lavaditos y picaditos
  • --3 cucharadas de mayonesa vegana o regular
  • --jugo de 1 limon
  • --semillitas, arandanos secos y pasas al gusto
Instructions
  1. In a bowl, add the cooked and shredded chicken thighs (you can use rotisserie chicken shredded or chicken breasts), the salt, pepper garlic powder, red onion, celery, red and orange bell peppers, lime juice and the raisins, dried cranberries and sunflower seeds. Mix everything very well, taste it and set it aside.
  2. -- For the avocados, cut in half, peel the ski off and add little bit of lime juice to each slice, and a pinch of salt.
  3. -- Last, stuff avocados with the chicken salad mixture and enjoy!

En un tazón, agregue los muslos de pollo cocidos y desmenuzado (puedes usar pollo asado rallado o pechugas de pollo), la sal, el ajo en polvo, la cebolla roja, el apio, los pimientos rojos y anaranjados, el jugo de limon y las pasas, los arándanos secos y semillas de girasol. Mezcla todo muy bien, pruébalo y déjalo a un lado.
  6. - Para los aguacates, córtelos a la mitad, quite la cascara y agregue un poco de jugo de limon en cada rebanada, y una pizca de sal.
  7. - ¡Por último, rellenes los aguacates con la mezcla de ensalada de pollo y a disfrutar!
