How to make flavorful corn fritters
Easy flavorful corn fritters
Delicious and flavorful appetizer of corn fritters
- 2 cans sweet kettle corn (drained)
- 1 tbsp fresh cilantro (chopped)
- 1 garlic glove
- 3 tbsp all purpose flour
- 1 tbsp white onion (finely chopped)
- 1 tbsp red bell pepper (finely chopped)
- 1 tbsp orange bell pepper (finely chopped)
- 3 tsp salt (or to taste)
- 1 tsp black ground pepper
- 1 whole eggs
In a blender add the garlic, eggs, all purpose flour, 1 can of corn (drained) and cilantro. Blend until smooth.
In a mixing bowl, add the blended mixture. Also, add the onions, bell peppers, salt and black pepper. Mix very well. Consistency should be thick.
In a pan, add avocado oil, enough to fry the fritters but not to deep fry them.
Add a tablespoon of the corn mixture at a time, I added 4 at a time.
Fry them for about 1 to 2 minutes on each side. Making sure they are golden brown before flipping to the other side.
Once cooked, place them on paper towel so it can absorb most of the oil.
Serve with your favorite dipping sauce and enjoy!
