vegetarian egg muffin melts

Quick and easy vegetarian egg muffin melts / ricos muffins vegetarianos
Ingredients
  • 2 English muffins ( cut in half) / 2 english muffins ( cortado en mitad)
  • 3 eggs / 3 huevos
  • red and green bell peppers ( as much as you'd want) / pimientos rojos y verdes
  • red onion / cebolla roja ( to your liking)
  • salt / sal
  • pepper / pimienta
  • mozzarella cheese / queso mozzarella
  • avocado oil ( or any cooking oil that you have) / aceite de aguacate (o cualquier otro aceite de cocina que tengas)
Instructions
  1. -In a skillet at medium high heat add 1 tablespoon of avocado oil and cook the onion, red and green belle peppers for about 5 minutes or until tender./ en un sarten agregar 1 cuchara de aceite de aguacate ( o cualquiera que tengas) y agregar la cebolla y pimientos, cocinar a fuego medio alto hasta que los vegetales eaten suave.
  2. - Add the eggs and season with salt and pepper. Scramble until eggs carefully cooked./ agregar los huevos y sazonar con sal y pimienta. Revoltiarlos hasta que eaten bien cocido.
  3. - In a baking sheet or pan, add the english muffins and add the scramble egg mixture on of each slice, last add the shredded mozzarella cheese. / en un smarten de hornear, agregar los muffins y agregar los huevos revueltos por encima y despise el queso mozzarella.
  4. - Bake in the oven at 350 degrees for about 5 to 8 minutes until the cheese is melted. / Hornear en el horno a 350 grados por 5 a 8 minutos hasta que el queso este derritido.
